We choose the best of our partner counters in and around Higashi Chaya for the night, and you eat what Kanazawa's sea gave up that morning, one piece at a time.
Built around what came out of the Ishikawa sea that day. What was cured, what was aged, why this fish now — the chef explains as his hands move.
The counter is held for KAHACHI guests only, so you can ask questions and take your time. On some evenings a chef who does not usually work the counter comes in for us.
You do not need to know the etiquette. Everything is explained in English as you go.
